It’s well into the school holidays and you may be trying to find a way of passing a few hours with your younger family members, so why not take a walk in the country and pick a few blackberries from the hedgerows and then when you are back have a go at this recipe?

I got some lovely spinach from Growing Well at Low Sizergh the other week via its new crop share scheme and decided to ring the changes with this iron-packed vegetable with this recipe from the Filippo Berio olive oil people ...

A couple of weeks ago myself and a good friend (someone who has previously done the recipes for The Bolton News) Tom Bridge took part in the BBQ weekend at Boltons award winning market. Now with the chance of some good weather coming our way I thought a couple of recipes might be in order.

As promised another recipe using ingredients from your store cupboard, the difference with this week’s is that you may not already have the peppers, olives and lemons (if you decide to use them) but they are all easy to find. You could buy them this week and do the recipe in six months as they are all things that will last for ages.

Following on from last week here is another recipe that could quite easily be made up with ingredients you may already have in your kitchen cupboards or even tucked away in the back of your freezer, I am the world’s worst when it comes to freezers, yes I will put things in but unless it’s ice cream I will go and buy fresh rather than use something out of the freezer.

For the next few weeks I have decided to look at the recipe section a little differently and the recipes will all be around a theme of using ingredients you may already have in your cupboards or fridge.

Last week I used one of the recipes from the demonstration at the launch of Bolton’s new local produce market and we would like to thank all of you who came down and supported the traders. There are still a few stalls to fill but what I found encouraging is that the producers that have signed up so far are all really passionate about their products and that really shows in the quality.
